Savoury Seafood melts

I love seafood. Any kind of seafood. Although I don't make this often, I should. It is rich and creamy, savoury and cheesy (4 of my favourite things- I am a savoury and salty girl much more than a sweets kinda girl).  This used to be one of my favourite things to order at a seafood restaurant, but after making it at home, I have to say that I actually like my version more.



This throw together dish is ready and on the table in less than 20 minutes making it an easy lunch or weeknight dinner that will definitely please all of the seafood lovers in your life. You can get fancy and use real crab meat and shrimp but if you are in a hurry, imitation crab and canned shrimp will do just fine. (I usually do imitation crab and fresh shrimp).

Recipe:

1 package of imitation crab meat, cut into medium chunks or 1 can lump crabmeat
8-10 medium-large shrimp, cooked and cut into small pieces 
1 tbsp dijon or spicy mustard
4 tbsp mayonaise 
1 green onion finely chopped
2 tbsp red pepper, finely chopped
1 tsp sea salt
1 tsp fresh black pepper
A dash (or two) of Worcestershire sauce)
4 slices of swiss cheese (you can also use mozzarella or monterey jack)
2 large Ciabatta buns cut in half or 4 pieces of your favourite bread (I like rye or some type of multigrain)
2 Tbsp butter, melted or olive oil

Instructions:

Combine all the above ingredients except for the cheese, buns and butter in a bowl and mix until well combined. 

Brush buns or bread with melted butter or olive oil and place on baking sheet. Broil for approx. 2 minutes. Watch carefully as your oven may take more or less time and things burn quickly on broil. What you want here is for your bread to start just start getting toasty and golden brown.

Remove buns from the oven and add desired amount of seafood mix to each. I like to pile mine high, but if you have any leftover mixture you can save it in the fridge for 2 days and use as the topping to a salad, or make yourself another seafood melt.

Place back in the oven at 350 degrees for 5-10 minutes until mixture is warmed. Take out of the oven and add a slice of cheese to each open faced sandwich. Turn that oven back to broil for another 1-2 minutes (again, watching carefully). You want your cheese to nice and melty.

Serve immediately and enjoy.
