Simple baked samosas
These samosas are everything. They have a nice crunchy exterior and a delicious filling that is just bursting with flavour.
They are super easy to make, which makes them a perfect dish to add to your meal prep list. The recipe makes a ton, so you can make enough to feed your family for dinner and still have plenty leftover for lunches throughout the week. Bonus- they freeze well too, so you can throw them in the freezer and take them out in the future for a perfect grab and go lunch.
Recipe:
1 package of egg roll wrappers
1 lb ground turkey, pork or beef (or if you are vegetarian, you can use meatless ground)
1 medium onion, chopped finely
3 medium potatoes, peeled and chopped into small cubes (about 1 inch)
1 cup frozen peas (or you can use 1 can, drained)
2 cups fresh baby spinach (optional)
2 cloves garlic, minced
2-3 Tbsp yellow curry powder (depending on how spicy you like it)
1.5 Tbsp garam marsala
1 Tbsp Tumeric
1/2 Tbsp chile powder
salt and pepper to taste

Instructions:
1. Peel and chop potatoes into small cubes.
2. Coat the bottom of a large skillet with olive oil and add the potatoes. Cook covered on Medium heat until potatoes are just soft (do not overcook, you don't want the potatoes to become mushy)
3. Remove potatoes from the skillet and set aside for later
4. Add ground beef and onion to the skillet and cook on medium until beef is completely cooked
5. Add the garlic, peas and potatoes to the skillet
6. Add all of the spices and season with salt and pepper to taste
*note- with your spices, start off with a little less than suggested and taste your mixture. You can add as much as you like for your taste.
7. Heat mixture just until peas are hot. Turn off heat.

8. Now its time to fill your wrappers. Open the package of wrappers and cover them with a damp paper towel or cloth.
9. One at a time, remove a wrapper and place a small scoop of meat/potato mixture into the middle of the wrapper. Brush the edges of the wrapper with water which will act like a glue
10. Fold the wrapper to make a triangle. You want enough filling in each wrapper that your samosas are nice and full, leaving enough room around the edges so you can get a nice seal. You want the edges to stick together and then you can fold the edges inward (see picture at top, this will give you a good idea of how I folded them)
10. Place on a parchment paper lined baking sheet and bake in a 375 degree oven. Bake for 30 minutes. At 15 minutes, flip the samosas so that each side becomes golden brown.
11. Serve with your favourite dipping sauce. I used a sweet and spicy chili sauce
